Description: Custardy pudding with soft apple pieces.

Ingredients:
  1. 6 medium Granny Smith apples, peeled, cored and thinly sliced
  2. 50 g butter
  3. 4 tablespoons brown sugar
  4. 1 cup milk
  5. 300 ml cream
  6. 1/2 cup sugar
  7. 4 egg yolks
  8. 300g white bread
Preparation:
  1. Preheat the oven to 180 C
  2. Melt the butter in a frying pan over a medium heat.
  3. Add the apples to the pan and sprinkle over brown sugar.
  4. Cook, turning at times, until apples are tender.
Instructions:
  1. Pour milk, cream and sugar into a small saucepan and bring almost to the boil, stirring to ensure sugar is dissolved.
  2. Allow to cool until warm then gently pour into egg yolks and whisk to combine.
  3. Slice bread into 1 cm thick pieces.
  4. Line a 30 cm oval baking dish with bread pieces, saving enough to cover the surface.
  5. Spread the apples over and then pour over custard.
  6. Cover with remaining bread.
  7. Bake for 30-35 minutes.
