Ingredients: - 4 eggs
- 4C flour
Preparation: - Prepare a separate large board or surface with a dusting of flour.
Instructions: - Sift high grade flour onto board/table.
- Make a hole in the center large enough to take the eggs.
- Crack the eggs into the hole and scramble.
- Starting from the inside walls, incorporate the flour into the eggs.
- If too dry, add the white of another egg. If too sticky, add a small amount of the flour.
- When all the flour is incorporated, knead the mass until it is elastic and smooth.
- Wrap in cling film and put in fridge for at least 20 minutes before rolling on a floured board.
- (Can be frozen).
