    Talking Cheese Puff Muffins

    Description: These muffins can be eaten hot or cold, and are delicious stuffed with soft cheese, like brie.
    Serving Size: 12
    Time: 45 minutes
    Difficulty: Easy

    Ingredients:
    1. 2C Flour
    2. 4t Baking Powder
    3. 1C Grated tasty cheese
    4. 1 egg
    5. 1/2 C canola/sunflower etc oil
    6. 1 1/2C milk
    7. 1/2t salt
    Preparation:
    1. Preheat oven to 220 degrees C, or 190 if fan-forced.
    Instructions:
    1. Sift flour and baking powder into a bowl, add the cheese.
    2. Whisk egg, oil and salt together in a bowl, then add the milk.
    3. Pour the liquid into the dry ingredients, mixing until JUST combined. No dry lumps,
    4. but not beaten to a smoothness.
    5. Grease some mini muffin tins, drop spoonfuls into the tins.
    6. Fill the tins about 3/4, as they will rise.
    7. Sprinkle the tops with more grated cheese.
    8. Bake for 10-15 minutes or until golden.
