These muffins can be eaten hot or cold, and are delicious stuffed with soft cheese, like brie.
Ingredients
2C Flour
4t Baking Powder
1C Grated tasty cheese
1 egg
1/2 C canola/sunflower etc oil
1 1/2C milk
1/2t salt
Method
Preheat oven to 220 degrees C, or 190 if fan-forced.
Sift flour and baking powder into a bowl, add the cheese.
Whisk egg, oil and salt together in a bowl, then add the milk.
Pour the liquid into the dry ingredients, mixing until JUST combined. No dry lumps, but not beaten to a smoothness.
Grease some mini muffin tins, drop spoonfuls into the tins. Fill the tins about 3/4, as they will rise. Sprinkle the tops with more grated cheese.
Bake for 10-15 minutes or until golden.
